Iced Coffee Blast
6 oz dry coffee, Instant
1 1/2 c sugar
1 qt water,boiling
1 ga vanilla ice cream
2 c kahlua
2 qt milk
2 qt water, cold
Dissolve coffee and sugar in 1 quart boiling water; stir well and refrigerate. When ready to serve, combine cold coffee mix with the remaining ingredients and pour into a punch bowl. Leave the ice cream in one large chunk.

Easy Macaroni and Cheese Dinner
3 Boxes of macaroni and cheese
1 Stick of butter 12 oz.
16 oz. Cheddar cheese sauce (any brand)
4 oz. Shredded cheddar cheese
1/4 cup of evaporated milk
Paprika
Directions: Pre-heat the oven and set on broil. Boil the pasta and drain. Except for the shredded cheddar cheese, add all the ingredients including the cheese mix. Put the macaroni and cheese on a oven safe casserole plate or pan and spread the shredded cheddar cheese. Sprinkle with paprika and put on the oven until cheese is brown. Serves 8 (double or triple ingredients for entertaining)
You can also add broccoli, ham, cauliflower, chili, ground meat and even make it as a casserole by spreading stuffing on top and baking it for 15 minutes.

Rigatoni Dinner
1 lb. boil and drain Rigatoni
1 or 1/2 lb. Chicken, Sausage or Ground Meat
2 large diced onions
2 chopped scallions
2 large jars of spaghetti sauce (anything w/onions and/or garlic)
1 can of mushrooms (optional)
2 small diced tomatoes
3 tbs. butter or 3 tsp. oil (I prefer butter) I love it!
1/2 tsp. parsley (optional) I love it!
1 adobo or salt and pepper to taste
1 large pot
Directions: In a large pot add butter or oil and meat until brown or it's no longer pink. Add the rest of the ingredients except the pasta, scallions and spaghetti sauce and cover pot. Cook for 4 minutes not longer, add the spaghetti sauce. Let it simmer for 20 minutes and add scallions. Uncover and let it simmer for another 5 minutes. Add pasta and serve. Tip: For 1 lb. or 1 box of pasta add 1 1/2 to 2 jars of spaghetti sauce. Be generous with all your ingredients but, don't overwhelm the flavor. That's what makes a recipe good!
Tri-Color Pasta Salad
1 lb. Tri-color rotini pasta cooked 16 oz. Italian dressing (I prefer Zesty)
8 oz. Mozzarella cheese cubed 8 oz.
8 oz. Salami, Chicken or Turkey cubed
1/2 Red Onion and/or 2 scallions chopped Olives (optional)
Carrot shave strings to garnish (optional)
Directions: Mix everything together on a large bowl and enjoy! Don't forget to mention I gave you the recipe. Serves 6-8 (double or triple ingredients for entertaining)
This is the easiest pasta salad recipe I created. I usually cooked this at home when I don't want to spend a lot of time in the kitchen. My family loves it. You can play around with the recipe and make it your own by using other ingredients. ~Y
